PORK CRACKLINGS IN GRILLED SALSA VERDE TACOS
600 gr chopped pork cracklings
- 5 g Sal Ahumada Original SMP
- 5 g Hierbas Aromaticas
- 5 green tomatoes
- 2 serrano chiles
- ½ white onion
- 1 garlic clove
- 10 g fresh chopped cilantro
- Lard or vegetable oil
For the grilled salsa verde:
Grill the green tomatoes, garlic and onion.
Soak the chiles in warm water for 10 minutes. Set the water apart.
Add to a blender the grilled vegetables, chiles and add a little of the water used to soak the chiles and a pinch of Sal Ahumada Original SMP, blend until obtain a uniform mix.
Add chopped cilantro and set apart.
For the pork cracklings tacos:
Heat 1 tbsp of vegetable oil or lard in a pan or saucepan at medium heat.
Add the chopped pork cracklings and fry very well.
Add the grilled salsa verde and mix well, so the salsa moisturizes the pieces of pork cracklings.
Serve with corn tortillas.
